Berry frozen yogurt

This delicious berry frozen yogurt is quick and easy to put together with only a few ingredients.

For this berry frozen yogurt, I used a combination of strawberries, raspberries and blueberries.

You can use whatever berries you like.

To sweeten my frozen yogurt, I used a combination of stevia [packets], and honey. You can add more to taste, depending on your preferred level of sweetness.

Freeze for 3-4 hours or overnight.

The texture, you’ll notice, is different from most frozen yogurts and that is because the kind of sugar that is in this recipe. Corn syrup is typical in most frozen yogurt and even ice cream recipes. Without getting too technical, the corn syrup is what keeps these frozen treats smooth, creamy, and prevents crystallization. But in order to keep it healthy and the sugar content low, we replaced the corn syrup with stevia and honey.

Well, I better get back to my frozen yogurt that I’m not sharing or feeling an once of guilt for eating.

BERRY FROZEN YOGURT

 Serves 3-4

Ingredients:

4 C. Mixed berries (or favorite berry)

1 C. Preferred Greek yogurt (I used non-fat Greek yogurt)

1 tsp. fresh lemon juice

3 stevia packets

1 tsp. Honey

Method:

1. Purée the berries in a food processor or blender. Add remaining ingredients and pulse together a few times. Scrape down in between pulses.

2. Pour the Berry yogurt into an air tight freezeable container and freeze for at least 3 hours or overnight. Once frozen, let it sit at room temperature for a few minutes to make it easier to scoop. You can store it in your freezer for up to two weeks.

Enjoy!

Best,
