Asian Meatballs (Paleo friendly, egg free)

So I’ve been on an Asian kick lately and am constantly craving these flavors. For the Super Bowl, a few weeks ago, I decided to make some game friendly food with flare. This was all on a whim and I found a recipe online from a very big Paleo blog (nom nom paleo) that I wanted to try. Although, I didn’t have all ingredients it called for, I improvised some and came up with this recipe, using hers as a guide.

The veggies and some of the ingredients I changed because (a) I didn’t have the ingredient or (b) I didn’t like the ingredient. So this is what I came up with and it was pretty darn good and I had the empty plates and full bellies to prove it.
Enjoy this recipe. And if you don’t like something, replace it with something you do like. Be creative, spice it up, make it your own, and enjoy being the kitchen mastermind. And if you come up with any alternatives, please share and I will post it!

ASIAN MEATBALLS
Makes about 36 meatballs

Ingredients:
4-5 large Brussels sprouts, shredded
2 small shallots, minced
¾ cup minced carrots (use shredded carrots, then mince)
1/2 to 1 T. Fresh grated ginger (depending on your preferred taste)
2 cloves of garlic, minced
2 tablespoons minced cilantro or culantro, optional
2 pounds ground beef
1½ tablespoons Paleo-friendly fish sauce or hoisin sauce,
2 tablespoons tomato paste
1 1/2 t. Kosher salt
Freshly-ground black pepper
2 tablespoons coconut oil
Sesame seeds, optional

Directions:
1. Shred and/or mince the veggies, garlic and ginger.

2. Turn on oven to 350 degrees. Heat a pan to medium high heat. Add coconut oil to the hot pan, then add the garlic and ginger and cook until fragrant. Add shredded and minced veggies and cook until soft. (3-5 minutes).

3. Once veggies have cooled, add them to the ground meat. Add salt and pepper, hoisin or fish sauce, and tomato paste. Mix gently until well combined.

4. Form into 1 inch size round meatballs. You can weigh them or just eye ball them. Cook for 15-20 minutes. Let cool for a few minutes and top with sesame seeds, if desired.

leftovers can be frozen.

Double them up, and you’ll have them on hand for a quick meal because there won’t be any leftovers. Hope you enjoy these delicious meatballs!
