One of my favorite things to eat for Cinco de Mayo is guacamole. Guacamole is something that I make on the regular with or without a holiday, but I especially make a good bit for this occasion. I use it as a spread or dip on hamburgers, meatballs, chips, eggs sunny side up, and potatoes! It is quite versatile.
I made this today with a little something special. I added bacon. Of course I did. It was really good! So good, I ate about half of it on my own with some turkey meatballs
that I had seasoned with the taco seasoning that I made last week for the teacher appreciation week. It was delicious!

Chunky Bacon Guacamole
Ingredients:
2 avocados (one fairly ripe and one that is a little firm to keep it chunky)
3 strips of fully cooked bacon, crumbled
1/4 c. Finely diced red onion
1 garlic clove, minced
The zest and juice of half a lime
Salt and pepper to taste
Dash of Chile pepper or cayenne pepper (optional)
Directions:
1. Cut the firmer avocado into chunks and mash the more ripe avocado and add to a medium sized bowl.
2. Add all the other ingredients to the bowl and gently fold. Taste and adjust seasoning as needed.
